The Okinawan traders brought something back too. Nasi goreng is an Indonesian dish that's enhanced by the fish sauce commonly used in Thailand {nam pla in Thai) and Vietnam {nuoc mam in Vietnamese). This lively sauce (found in Asian food stores) gives a special Asian zing to almost any dish you flavor with it. If you find its aroma a bit strong, substitute a mixture of 1 teaspoon low-sodium soy sauce and Vi teaspoon water.
Whole grains, such as wheat berries are lower CD, but after processing into flour or baked into bread, virtually all grains are middleweight or higher. • Almost all breads, even brown bread (CD 2.5—3.0), weigh in as middleweight and border on heavyweight. • Eat most grains in moderation, and stick to the brown kind. smoothly. The brain even rewards you with serotonin, the "feel-good hormone," when you eat them, since it prefers glucose, a simple carb, for brain fuel.52 Many foods rich in whole-grain carbohydrates are also good sources of essential vitamins and minerals.

It's particularly good on fish and vegetables. Mint There are twenty varieties of mint, including several that grow wild. Most Americans are familiar with these as flavors of chewing gum and hard candies such as peppermint, spearmint, and wintergreen. Bergamot, which is the flavor of Earl Grey tea, is also a mint. Peppermint aids digestion by relaxing the sphincter muscle between the swallowing tube (esophagus) and the stomach, releasing trapped gas after a big meal. That's why many restaurants traditionally serve after-dinner mints and why many antacids contain mint.

In southern China, around the city of Canton (now called Guangzhou), steamed white rice, with boiled or stir-fried vegetables, is made with a minimum of oil. Since many Chinese from the southern provinces immigrated to California in the 1800s, Cantonese food is the basis for Chinese-American foods in which oil and extra-sweet sauces are used. Sweet-and-sour sauce, and the fried dishes drawn from other Chinese cuisines, such as Hunan beef, Szechwan chicken, and shredded pork, were drawn from other areas and repackaged for high-fat American palates.
The International Color Code Many ethnic cuisines work well with the Color Code because they use lots of vegetables, fruits, whole grains, herbs, and spices. Here is a brief tour of international cuisine with suggestions for menu items that work best. Chinese and Japanese Restaurants Chinese foods as they are eaten in China are among the healthiest in the world, but Chinese-American foods are among the highest-fat foods in the world. China has at least four distinct regional cuisines, each one reflecting differences in geography, climate, and historical influences.
If you need to chomp on something, order a large salad with wine vinegar or lemon and a glass of wine followed by a big plate of steamed vegetables or a vegetable soup. By concentrating on getting your Color Code completed, you will be eating more quantities of food with fewer calories than most foods you can find on a restaurant menu. Focus on Fat: Restaurant Style Controlling the amount of fat you eat is another huge hurdle in restaurants because fats are everywhere.

It is very complicated—there are lots of different kinds and qualities of vegetables. But somehow Louis is able to figure how much to charge for the tomatoes and the squash without using a computer. His customers come with empty shopping bags and go home with something good for dinner. As if by magic, everything comes out even, although every individual at the market has a different relative value scale. Well, that is a microcosm. There is also the Chicago commodities market, which assuredly does use computers.

The famous ancient physician Galen worked out a comprehensive diet for cancer patients, which included poultry, vegetables, fish and red wine—all substances now known on scientific grounds to be beneficial to cancer patients. When vitamins were discovered a century or so ago there was considerable interest in trying them out in cancer. In fact, until the emergence of chemotherapy, oncologists were receptive to this development. Speaking of these early attempts, the authors of a 1940 cancer textbook wrote, "Results have been impressive.

In picking the young plants to use as vegetables, he is also thinning the patch to allow the remaining amaranth to grow for grain. When the crop is mature, Don Cornelio harvests most of the amaranth but leaves a few stalks to drop their seeds, thus naturally resecding the plot for a second planting. In the Andes—the other great center of amaranth domestication—Indians of the Quechua culture have grown Amaran-thus caudatus for many centuries, using methods as inventive as those of Don Cornelio, Amado Garcia, and other Aztec descendants to the north.

The report indicates that dietary sources of water represented by fruits, liquids (especially fruit juices and milk), and vegetables are greater for infants than for older children or adults, and should be considered in estimating the risk from dietary exposure to potential human carcinogens. Such age-dependent differences in dietary patterns need to considered when evaluating lifetime cancer risks (Goddard et al. 1995). Dietary patterns can change markedly over time with changes in food preferences and the introduction of new foods.
By 1970, the possible anticarcinogenic activity of vitamin A was being explored, as were the modifying effects of fruit, fiber, dairy products, and certain vegetables. In 1969, the International Union Against Cancer (UICC) convened a committee to address issues of cancer testing. The committee held a workshop that focused on the major testing methods and priorities for carcinogenicity testing.
Foods highest in dietary fiber include whole (unrefined) grains and breads made from them, legumes, vegetables, fruits, nuts, and seeds. According to the 1985 CSFII Survey, average intake of dietary fiber per day for women 19 to 50 years of age was 10.9g; for cbildren 1 to 5 years old, 9.8g (both based on 4 days of intake); and for men 19 to 50 years old, 18g (based on a 1-day intake). The 1986 CSFII (USDA 1987) indicated that women in the west and midwest sections of the U.S. had higher intakes of dietary fiber than those in the south or northeast.

Nitrate in vegetables is accompanied by varying amounts of ascorbic acid and polyphenolics, which inhibit the nitrosation reaction. Nitrosa-mines are also found to a small extent occurring naturally in foods. It is important to note that the putative naturally occurring carcinogens in our food are not a separate, easily definable class of constituents. They depend on the definitional criteria applied, on what is selected for testing, or on accidental discovery. They are merely a small part of the complexity of food.

The Scarlet Runner, which we personally have championed as one of America's most neglected garden vegetables, clearly is more neglected than ever. U.S. catalogs now rarely carry this lovely bean at all or, if they do, list just one cultivar. British catalogs, on the other hand, offer as many as seven types, varying in height, earliness, color of flowers and seeds, and other characteristics. When grown in regions of long and not-too-hot summers such as the Pacific Northwest and New England, the Scarlet Runner produces what those who know them regard as the best-flavored of all green beans.

The latter appear to have reached the United States in the early nineteenth century, for in his classic study, vegetables of New York, U. P. Hedrick notes that in 1824 Captain John Harris of the U.S. Navy brought seed of this type from Lima and grew the plants on his farm at Chester, New York. By the late 1840s, lima beans were being shipped directly from Peru to California for consumption in the goldfields. It may be that at this time they received their now-customary name, a mispronunciation of Lima, their port of origin.

In the late 1980s, scientists at the University of Alabama Medical Center found that the folic acid in dark leafy vegetables, oranges and liver could act together with vitamin B12 to prevent injuries to lung tissue and retard the development of cancer among cigarette smokers. These researchers found that smokers whose lung cells were injured had low levels of both folic acid and vitamin B12. Since these nutrients are necessary to synthesize DNA, a deficiency of one or both of these vitamins could make cells more susceptible to the effects of carcinogens.

Not until the first part of the nineteenth century, when eggplant was promoted by Decoufle, a Parisian specialist in early vegetables, did it begin to appear as a foodstuff and to figure in recipes. In Spain, however, the picture was different. Near the beginning of the sixteenth century, Ruperto de Nola gave four recipes for the eggplant in a cookery book that appeared first in Catalan and then in Spanish. Jumping ahead, we find eggplant as prominent as any other vegetable in Juan dc Alta-miras's little cookbook of 1817.

Restricted or eliminated are most dairy products, eggs, red meat, refined sugar, caffeinated or alcoholic drinks, processed foods, some less healthy oils, and some vegetables in the nightshade family such as eggplant and green peppers.24 Scientific Rationale of the Block Nutrition Program Block provides a very lengthy scientific rationale for each of the components of his nutritional program, discussing clinical, epidemiological, and laboratory evidence supportive of the choices he has made.
The strict diet (for acutely ill patients) included at least 50% raw foods (some patients were given completely raw foods diets for up to a year) and included up to a quart of fresh carrot juice a day, other fresh vegetable juices, whole-grain breads, whole-grain cereals, fresh fruits, nuts, baked or boiled potatoes, salads, homemade soups, and raw or freshly cooked vegetables.23 The diet was based around the fresh juices, which, in addition to pure carrot juice, included carrot juice mixed with apple juice, spinach juice, cabbage juice, cucumber juice, beet juice, or tomato juice.
Block concluded that: "While it is likely that ascorbic acid, carotenoids, folate and other factors in fruit and vegetables act jointly, an increasingly important role for ascorbic acid in cancer prevention would appear to be emerging."35 A recent combined analysis of 12 case-controlled studies by Geoffrey Howe at the National Cancer Institute in Canada found that fruit and vegetable intake, and most notably vitamin C intake, provided a consistent protective effect for breast cancer.
They provide bulk in food and are found in vegetables, fruits, and whole grains. Dietary fiber consumption often decreases with the consumption of a Western-style diet. Based on epidemiological studies, Burkitt and Trowell proposed in 197S that the increased incidence of some cancers and other chronic illnesses may result from a low intake of dietary fiber.34 Extensive research studies followed.
