We were certainly the first generation to eat synthetic pesticides in our pureed vegetables. By 1950, residue-free produce was so scarce that the Beech-Nut Packing Company began allowing detectable levels of residue in baby food. Banned pesticides, like fugitives from justice, have not entirely disappeared. We have forgotten about them, but they are still among us. They frequent foreign ports. They languish underground.
And so was arguing about exactly how many picograms of dioxin could acceptably contaminate these fields, the bodies of the people who plow them, and the flesh of their hogs, turkeys, and garden vegetables. So was discussing exacdy how many thousands of gallons of water a day could be pumped out of this land in order to burn garbage. So was manufacturing substances that are poisonous when incinerated and undegradable when buried. And so was the rapacity of subsidizing incineration over recycling in the first place.
Over the past three decades in Illinois, harvests of fruits, vegetables, hay, wheat, and oats have all fallen off. Orchards, pastures, vegetable plots, and woodlots have been plowed into ever-larger fields of corn and soybeans, which are now running neck and neck in number of acres planted. All of these changes conspire to make farming an increasingly remote activity. With meat, milk, eggs, and produce trucked to our supermarkets from distant and unknown locations, we know less and less about how and where our food is grown and by whom.
FFDCA governs pesticide tolerances on agricultural commodities—that is, it sets legal limits for pesticide residues allowed in foodstuffs ranging from raw vegetables to animal feed. FIFRA, on the other hand, requires companies manufacturing pesticides to test their products for toxicity and submit the results to the federal government.
Food certified as organic is supposed to be free from manufactured pesticides, antibiotics, hormones, and other additives—that is, fruits, vegetables, meat, eggs, and milk produced without the use of artificial, synthetic chemicals. In the parlance of chemistry, however, organic simply refers to any chemical with carbon in it. The study of organic chemistry is the study of carbon compounds.
