Miso soup can be made with various seaweeds, such as wa-kame, and/or with one or two vegetables added. Soba (buckwheat) noodles can be added and cooked in the broth. Because of the live beneficial bacteria, miso should never be boiled. Simply add 1 level tablespoon of miso paste to 1 cup of hot water for each serving of soup. Another favorite use for miso is as a sauce. Mix together equal amounts of miso paste, sesame butter, and water and stir to a sauce consistency. A little grated garlic, grated lemon, or curry spices make a delicious variation.
