Saturated fat does not collect in the arteries like poly- and monounsaturated fat because it is not easily oxidized and only oxidized fat ends up as arterial plaque. vegetables oils are easily oxidized by over-processing and heating. people who eat coconut oil and don't have heart disease. In Western countries we eat very little coconut oil but consume a significant amount of hydrogenated vegetable oils. The result? Heart disease is on a rampage. It is our number one killer.

The other (internal) source is our own liver, which manufactures cholesterol for the essential functions mentioned earlier. vegetables do not contain any cholesterol. Under the right conditions of diet and exercise, the levels of cholesterol in our blood from the combined sources will match that required for healthy metabolism and will not create health problems. Of course this level varies from individual to individual, and in some instances a higher than normal cholesterol level can be due to genetic factors rather than diet.
In this respect, it is important to note that other components of the diet, such as carrots and green leaf vegetables, are also a source of vitamin A, and sunshine or fortified milk can provide vitamin D. The recommended daily allowance for vitamin A is 1000 retinol equivalents per day and for vitamin D is 400 International Units (IU). The deep sea shark liver oil referred to in this book has a vitamin A level less than 400 retinol equivalents per daily dose of 1000 mg, with vitamin D being barely detectable in this amount.

Vegetables of Shaalmali flowers (Bhaavaprakaasha) or powder of flowers with honey (Chakradatta) were also prescribed. Flowers of Shaalmali, well-steamed and mixed with Raajikaa (Brassica juncea) were prescribed for splenomegaly. Shaalmali tuber, mixed with cow-milk, was used as an aphrodisiac (Haarita Samhitaa). Paste of Shaalmali thorns, mixed with milk, was a popular facial cosmetic for freckles and for promoting complexion (Vrindamaadhava). Mocharasa (exudate of Shaalmali) was used by Charaka in combination with Chandana (Santa-lum album) for intrinsic haemorrhage.
Amlikaa leaves, cooked as vegetables, were prescribed for bleeding piles (Charaka Samhitaa). Leaves, crushed with water and expressed, were used in bilious fever and scalding of urine. Juice of leaves, warmed by dipping a red hot iron, was given in dysentery. A decoction of leaves was used as a gargle in throat infections; also as a wash for indolent ulcers. Poultice of leaves was applied over rheumatic affections. Hot decoction was used for fomentation. Paste of leaves and Haridraa (Curcuma longa) was prescribed as a prophylactic for smallpox (Chakradatta).

About 50 years ago the average grocery store contained few items, often in bulk, chiefly vegetables, grains, and fruit. A person ignorant of nutrition could by chance purchase what would be needed to sustain good health. Suppose one were instructed to purchase 12 different items. The number of good items would be greater than the number of poor items nutritionally. That person could be healthy using those 12 items that had been selected at random, without any intellectual knowledge of which foods should be eaten or not. This is no longer possible in the modern supermarket.

Jivanti is mentioned by Charaka and Bhaavam-ishra (in Bhaavaprakaasha) as the best among leafy vegetables, but generally the fruits of the climber were used in Ayurvedic medicine. Charaka used the fruits alone or as ingredient of unguent or decoction in chest congestion, cough, and for rejuvenation and longevity. In West Bengal, fruits of Desmotrichum fimbriatum Blume or Dendrobium macraei Landl. are used as Swarna Jivanti. In the South, the root of Holostemma ada-kodien Schutt. is used as Jivanti.

It also has chlorophyll, which may be a potent anticancer substance.

Leaves, flowers, immature capsules are eaten as vegetables, said to give relief in cough that lingers after influenza. Young unripe pods (drumsticks) are cooked with curries as a preventive against intestinal worms. Seeds are given in case of an ascites resulting from enlargement of liver and spleen. Unani practitioners prescribe soup of the pods in sub-acute cases of enlarged liver and spleen, articular pains, debility, neurological disorders and skin diseases.

On the other hand, foods such as salmon (eaten with the bones), dairy products, green leaf vegetables, and almonds each provide a good source of calcium. Some medications, for example long-term use of corticosteroids prescribed in the treatment of arthritis, can lead to significant loss of bone density due to the double-barreled effect of reducing calcium absorption and increasing calcium excretion.
Some of this will come from the normal diet of vegetables and dairy products. However, if it is to be derived from a supplemental source, the actual amount of calcium present in the supplement will be less than the total amount of supplement ingredient. For example, calcium products based on calcium carbonate will only yield 40 percent of the weight as calcium ion, the rest being carbonate ion.
Taking the product at least two hours before a meal involving fruits or vegetables and using water or milk as an aid to swallowing the capsules or tablets will avoid this. Sea Cucumber The sea cucumber, which is also known as Beche-de-Mer, is a relative of the starfish and sea urchin family of echinoderms. It is widely distributed throughout northern and southern hemisphere waters and has been highly regarded for its therapeutic and culinary properties by the Chinese people for centuries.

If you learn how to cook food, you will find that fruits and vegetables, even though they are organic and cost more, are actually cheaper. I've done the math. I went to the store, I bought the Hamburger Helpers, the McDonald's food, the non-organic crap in cans, boxes, cartons, and jars, and I made three meals a day and added up the money. I didn't eat the food, but I made the food. I monitored how long it took and how much it cost.

It has been shown that impaired levels of fat and sugar metabolism may lead to cardiovascular disease and Type II diabetes. However, in a study published in 2004 in the Journal of Agricultural and Food Chemistry, researchers found that specific cinnamon bark compounds increased fat cells' sugar metabolism twenty times. In addition, these compounds' antioxidant properties may provide diabetic benefits.

Leafy tops are particularly rich in calcium, iron, ascorbic acid and are considered to be one of the richest sources of vitamin A among the leafy vegetables. Oxalic acid content of leaves is reported to be high (total oxalate 0.68 %, soluble oxalates 0.39 %) and as such may affect the calcium availability to the system. The vegetable is a fair source of calcium if consumed with rice. (The Wealth of India.) Radish contains glucose as the major sugar and smaller quantities of fructose and sucrose. Pectin (0.3 %, as calcium pectate) and pentosans are also reported, while starch is absent.

A diet which contains a variety of cereals, vegetables, fruit, and animal products is much more apt, even if only because of chance, to provide an adequate amount of these essential nutrients. For over 99 percent of man's existence on earth, there was no need to apply intelligence towards food selection. The only important fact was whether the food was poisonous or not. Among the foods found not to be poisonous, it was good enough to eat everything else provided there was an ample variety available.
Some years ago I pointed out that in some places in Vancouver the amount of lead in the surface soil is so great that people growing their own vegetables would be poisoned by it if they did not wash off the soil particles very carefully and thoroughly. There is more lead in the surface soil of some places in Vancouver than there is downstream from the lead smelters in Trail, British Columbia. There is less lead about since it has been removed from the gasoline but plenty is left.
About the only safe place in which to shop is around the walls, for that is where the vegetables and fruits, the meat and fish, the dairy products, much of the frozen goods, and the breads are found. Recently, I read a report that food processing companies were becoming concerned about the number of people who only shop around the walls, thereby avoiding most of their products. They were trying to work out a way to entice shoppers to go to the center of the store.

As a result, we have relegated vegetables, grains, nuts, seeds, fruits, and herbs to an insignificant accompaniment, or garnish, to a meat-based or animal protein-based diet. We owe this misconception about animal protein to good propaganda and beautiful marketing on the part of the meat industry. You must, however, be sure that you are getting high-quality amino acids from high-quality sources. You need 9/io gram of protein per kilogram of body weight, which is approximately 60 grams per day for women and 80 grams per day for men.

The residents and farmers of upcountry Kula who supply the island with an abundance of organic vegetables have had to go on water rationing while the big businesses of sugar cane, golf courses, cattle farming, condominiums and resort hotels stay green with unra-tioned water. Frozen fruits and vegetables are usually flash-frozen just after being harvested, so their nutrients are locked in. Many are available already chopped, which saves you a prep step. The researchers found that Alzheimer's disease patients ate more meat and avoided fish and green-yellow vegetables compared to controls, and thus ate less beta-carotene, vitamin C, and polyunsaturated fatty acids. The author suggested that the findings imply that Alzheimer's disease might be a lifestyle-related disease such as coronary heart disease, a western style diet-associated cancer, and a hyperallergy. In a second phase of the study the patients were given a supplement of the essential oil EPA, at a dose of 900 mg/day, which improved signs of dementia.

We've only been able to make these kinds of distinctions because we can now examine the micronutrients in fruits and vegetables and assess which ones have more health-promoting qualities. Micronutrients include two categories we're all familiar with: vitamins and minerals. The most exciting category of micronutrients and one that you'll hear more and more about in the coming years is phytonutrients. Phytonutrients ("phyto," from the Greek word for plant) are naturally occurring substances that are powerful promoters of human health.

Lutein is a yellow-pigment carotenoid found in vegetables and fruits. It acts as an antioxidant, protecting cells against the damaging effects of free radicals. Since it's not made in the body, lutein must be obtained from food or vitamin supplements. This substance is important to all of us because it helps maintain eye health. Research shows that people with diets rich in lutein and zeaxanthin are at a lower risk for degeneration of the macula, which is a part of the retina. Macular degeneration is the leading cause of blindness in older adults. Leafy green kale is a fine source of lutein.

The Iowa Women's Health Study followed 41,837 women aged 55 to 69 years for 5 years and found that garlic consumption was inversely associated with risk of colon cancer. The protective association with garlic was stronger than with any other nutrient analyzed in the study.
