In Iceland and Lapland angelica stems are cooked as a vegetable. The stems and roots can be candied and made into syrups and jellies or added to fruitcake. They also can be used to season fish. The fresh leaves can be added to salads and soups. The dried leaves are wonderful in baked goods and fruit desserts; their sweetness makes it possible to decrease the amount of refined sugar in the recipe. The oil from the seeds and roots is used in the manufacture of Benedictine, Chartreuse, vermouth, and gin. |

Coriander seed is one of the traditional bitter herbs of Passover. The seeds, mixed with cumin and vinegar, have been used to preserve meat. During World War II, coriander seeds were coated with sugar and marketed as sugar drops; they were thrown from carnival wagons, but this became considered wasteful, so little balls of paper were substituted, hence the coining of the word confetti, Italian for "sweetmeat." Coriander essential oil is used to flavor toothpaste and scent perfumes and soaps. |

The darker the vegetable, the more calcium it contains, generally speaking. So, if you want to get a lot of calcium into your diet, you can also consume increasing quantities of these green, leafy vegetables. That would include spinach, kale, broccoli, and of course, all of the popular salad greens, the darker the better.
What about coral calcium? As one reader pointed out to me in an email, coral calcium is essentially ground up limestone powder. And, I tend to agree with that assessment. It's not calcium in a plant form. |

They include linolenic acid (LNA), found in high concentrations in purslane, a green, leafy vegetable, and flax seed. Eicosapentanoic acid (EPA) and docosahexanoic acid (DHA) are the animal omega-3 fats in fish and fish oils and organ meat.
DHA is your brain's dominant fatty acid; it makes up about 40 percent of the fat in your brain. In research studies, higher levels of DHA and EPA have been associated with a lower incidence of high blood pressure, heart disease, diabetes, depression, attention deficit disorder, and dementia. Omega-3 fats also improve insulin sensitivity. |
If you're still dead set on the idea of eating lots of salt, cheese, pasta, cereal, and bread, keep in mind that for good health, you'll have to increase your fruit and vegetable intake by twenty servings! You'd better be hungry because you'll need a cow-size stomach to take in that much food.
Obviously, you can't do it, so the only option is cutting out the acid. The only practical solution is to eliminate low-nutrition foods that produce acid and/or contain bad fats. Also, start eating lean meat instead of processed meats. This means no prepared, preserved meats. |

Most nut, seed, and vegetable oils—the oils used to make processed foods?are rich in omega-6 polyunsaturated fats, which are almost always made into the chemicals that promote inflammation. Eating refined flour and sugar pushes more of the omega-6 fats you eat into the making of those inflammatory chemicals. This is one reason why refined flour and sugar are so bad for your health in so many ways. Also, if you're eating lots of margarine and food fried in corn oil, you're increasing the inflammation in your body. Modern diets tend to be quite high in the omega-6 fats and very low in omega-3 s. |
Aside from GLA from borage oil, which is used as a supplement (oatmeal is another good source), the omega-6 fatty acids found in meat, milk, vegetable oils, seeds, and nuts are rarely scarce in the standard American diet.
