Sea salt and freshly ground pepper to taste
Trim away all but the innermost leaf from each radish. Place the stock, mushrooms, and noodles in a soup pot, bring to a boil, and simmer for 2 minutes, or until the noodles are almost tender. Add the radishes and simmer for 2 minutes, or just until the radish turns from red to pink. Adjust seasoning. Divide the soup among individual soup bowls. Serve immediately before the radish color fades. Serves 4.

Add powdered dried herbs (purchased as powders or ground with kitchen mortar and pestle) in a ratio of 1 ounce for each cup of beeswax-oil base. If using more than one herb in an ointment, use equal quantities of each herb to total approximately 1 ounce per cup. Essential oils are also useful in ointments. (See aromatherapy in Part Three for a discussion of essential oils.) They should be added to the base in a ratio of 1 teaspoon of essential oil per cup of base.
Keep homemade ointments in jars in the refrigerator. Be sure to label them so that they are not mistaken for food. |

Combine the first five ingredients in a medium bowl and stir well. Add the melted butter and egg; stir thoroughly. Drop the dough by rounded teaspoonfuls 3 inches apart onto baking sheets coated with cooking spray. Bake at 350° F. for 12 minutes. Remove from the pans, and let the cookies cool completely on wire racks. Makes two dozen cookies.

Combine the first four ingredients in a bowl; cut in 1 tbsp. butter with a pastry blender until the mixture resembles coarse meal. Set aside. Next, combine 1 cup flour and the next five ingredients in a large bowl; mix together thoroughly. Combine yogurt and the next two ingredients; stir well. Add this to the flour mixture, stirring just until moistened.
Coat a nine-inch round cakepan with cooking spray; lightly dust with two tsps. flour. Spread the batter into the prepared pan. |
In a Vita-Mix whole food machine or similar food processor, combine 1 cup beans and oatmeal. In a saucepan, melt the butter, add 1/4 cup flower and cool for 3 minutes. Slowly add milk and reserved bean liquid, stirring constantly, and bring to a gentle simmer. Cook, stirring always until thickened. Add the kelp, nutmeg and parsley; mix with the beans and oatmeal.
Preheat oven to 375° F. Dab a paper towel in some olive oil and lightly rub it over the sides and bottom of a baking dish. Then fill the bottom with bread crumbs. Add the remaining beans and pour the beans/oats mixture over the top. |

N.Am. The Italian corn salad (V. eriocarpa - from S. Eur.) is also cultivated. The three species mentioned are very popular in Eur. V. locusta (m.a.) is commonly sold in French and Swiss markets. The roots of these docks are known to contain tannin and minerals, especially iron. Yellow dock root is used as an anti-anemic to increase the red blood cell count. As it is extremely bitter, it is pulverized and packed in capsules or macerated in wine.
Dock root is also astringent, depurative and tonic. It is used externally crushed as a vulnerary on wounds and ulcers.
The petioles of a European species (R. alpinus) are used like rhubarb. Its roots were formerly much in favor in Europe as a laxative.

Watercress has been used as food since Antiquity. The whole plant is eaten raw in salads (where it is then pungent), or cooked in soups or as greens (where it becomes much milder). Its characteristic taste is very pleasant. It can also be fermented into sauerkraut.
Beware: eating excessive amounts of raw watercress can lead to urinary troubles (cystitis).
If it is to be drunk, watercress juice must always be diluted with water as it is very irritating. |

Like most crucifers, the whole plant contains an essential oil.

This is one of the most common causes of human injury during disasters. It is the number one cause of fire related deaths. The inhalation of smoke always causes tissue damage. Sometimes, for good measure, I will even suggest adding a little powdered or granulated kelp (about one half teaspoonful) for good measure. (Kelp is a seaweed obtained from health food stores and is rich in iodine and other trace elements which benefit the thyroid gland a lot.)
Constipation. Some German doctors have routinely used small amounts of fresh radish juice to gently stimulate peristalsis so that bowel evacuation can be promoted. It is usually diluted with a little cabbage, celery, parsley, or watercress juice.

Lycopene is the most abundant carotenoid present in human plasma and tissues. Lycopene is especially highly concentrated in the prostate and undoubtedly has a protective benefit to the prostate as an antioxidant. Oxidative stress is always identified in the prostate tissue that develops into malignant cancer. The oxidation caused by free radicals damages the proteins and the DNA by chemically altering them. |
