DANDELION GREENS
Botanical information: A perennial or biennial milky herb (Taraxacum taraxacum) of the aster family, with a large yellow many-flowered head, solitary on a slender hollow scape or stem.

The high mineral content of this vegetable also helps to prevent splitting of nails of the fingers or toes.
Preparation: Cucumbers make a good base for a number of salads. To make a cucumber and radish salad, arrange on a plate in this order: six tomatoes, thinly sliced; three cucumbers, sliced; two shredded green peppers; one bunch of radishes, sliced. Top with sour cream dressing and serve.
For a stuffed cucumber salad, take one medium-size cucumber for each serving and slice off the bottom side lengthwise so cucumber will stand straight on salad plate. |
Reported health benefits: This is reported to be a good general tonic food and recommended for catarrh, obesity, acidosis, constipation, and hardening of the arteries. This vegetable is also recommended for bleeding gums.
Preparation: The wilted leaves are removed from the sprouts, after which they are washed and allowed to stand in cold water for fifteen minutes. They are then placed in a pan and sufficient boiling water is poured over the sprouts to cover them. They are then cooked without a cover for from ten to twenty minutes. Spices should be added for extra taste and flavor. |

High intakes of vegetable oil and margarine, for example, were associated with an almost 50 percent risk. (Celery—believe it or not—was associated with an 85 percent risk.) And it doesn't end in the womb.
A 1990 study in the journal Pediatrics found that there were clear and consistent associations between eczema and the diversity of a child's diet during the first four months of life. The more variety of solid foods that a mother introduced to her baby before the age of four months old, the greater were the odds of the baby developing atopic eczema. |
I routinely put at least four or five drops (4 mg to 5 mg) in a smoothie or fresh vegetable and fruit juice (the folic acid is tasteless!).
One more thing: Government agencies don't recommend high levels of folic acid supplementation, but the reason has nothing to do with the safety of folic acid. Doses of up to 20 mg (20,000 meg!) have been used safely with humans, plus it's a water-soluble vitamin, which means you'll get rid of any you don't need.
So the problem isn't with taking a lot of folic acid. The problem is that folic acid can mask the symptoms of B12 deficiency. |
Beets and beet juice have long had a reputation for being excellent for the liver, and in any case buying a juicer and making fresh vegetable juice on a daily basis (with some fruits thrown in if you like) is probably the best gift you can give your liver.

It's actually a radish-shaped vegetable that grows well in the Andes Mountains. I first heard about maca when I interviewed a researcher on my New York radio show who found that feeding maca to rodents increased their spontaneous erections. (This study was published in the April 2000 issue of the medical journal Urology.) Maca root contains a chemical called p-methoxybenzyl isothiocyanate, which is reputed to have aphrodisiac qualities. It also contains a bunch of chemicals found in other plants from the Brassica family (broccoli, cabbage, etc.), which are documented to be cancer preventive. |
This vegetable has a long folk history in treating many liver diseases. Their active ingredient is cynarin, which has demonstrated liver-protecting effects. Artichoke extract is in a lot of liver-protection supplement formulas.
Dandelion root. Many people living healthily with hepatitis C swear by this herb and use it to make a tea.
Reishi and shiitake mushrooms. Chinese herbalists prize Reishi mushrooms for their protective effect on the liver. The bitterer the mushroom, the higher the level of triterpenoids, which give it its potency. It's usually made into a tea or taken as an extract. |

Most nut, seed, and vegetable oils—the oils used to make processed foods— are rich in omega-6 polyunsaturated fats, which are almost always made into the chemicals that promote inflammation. Eating refined flour and sugar pushes more of the omega-6 fats you eat into the making of those inflammatory chemicals. This is one reason why refined flour and sugar are so bad for your health in so many ways. Also, if you're eating lots of margarine and food fried in corn oil, you're increasing the inflammation in your body. USDA recommendation: "Keep total fat intake between 20 to 35 percent of calories, with most fats coming from sources of polyunsaturated and monounsaturated fat, such as fish, nuts, and vegetable oils."
This recommendation is of major concern. In effect, your government is suggesting a level of fat consumption that cannot arrest vascular disease and—quite the contrary—has actually been shown to promote it.
