Variations: If you prefer, substitute any other fruit of your choice for the strawberries. If desired, you can use crumbled cookies or graham crackers as a crust in place of the pie shell, or simply chill the pudding without crust in pudding cups. For a chocolate flavor, add 1 tablespoon carob or cocoa powder (or to taste) to the blender with the other ingredients. |
Mix oil and miso together, and spread mixture on tofu slices. (If you are using tamari, marinate the tofu for one hour in the sauce.)

3. Lightly oil a cookie sheet. Place the tofu slices on the cookie sheet and broil, without turning, for about eight to ten minutes, until hot.
4. Spread half of the soy mayonnaise on one slice of the bread, sprinkle with half of the scallions, top with half of the broiled tofu slices, and close with another slice of bread. Repeat this procedure for the second sandwich. |
