Ginger (Zingiber officinale) is a member of the tropical plant family Zingiberaceae, a group of important spice-producing plants that also includes turmeric, cardamom, and galanga. Although many people think of the medicinal part of ginger as a root, it is actually a rhizome, which is a kind of creeping, underground stem. The knotty, irregularly shaped fresh ginger rhizomes sold in grocery stores are known in the botanical trade as "hands." Both fresh and dried ginger are used medicinally. |

Add the turmeric, mustard powder, and salt. Stir to blend mixture. Set it aside.
To make the dressing, in a large mixing bowl combine Nayonaise, lemon juice, Worcestershire, and Tabasco. When all is thoroughly blended, add the egg whites and the "yolks" and toss them to coat them. Salt and pepper the dressing to taste.
Spread approximately V2 cup of the Egg "Fu" Salad on bread or toast, add tomato and lettuce if desired, and cover the salad with a second slice of bread. Slice the sandwich diagonally.

• Atherosclerosis. Curcumin fights atherosclerosis by deactivating platelet-activating factor (PAF). This component of the blood seals leaks in blood vessels, in part by stimulating the production of fibrous tissue. This tissue can serve as a platform on which cholesterol can accumulate into plaques. Curcumin helps prevent atherosclerosis in people with diabetes, and offers the additional benefit of stopping the loss of protein through the kidneys. |

Simply crumble 2 ounces of Nasoya Firm Tofu into a small dish and add a dash of turmeric and mustard powder. When mixed together, it will resemble hard-boiled yolk. Be sure to note whether turmeric or curcumin is the form recommended for your condition. Unfortunately, curcumin is not absorbed well by the body. It is often sold in combination with bromelain to enhance absorption. Bromelain has some anti-inflammatory benefits of its own that may add to those of curcumin.
People with congestive heart disease whose cause remains unidentified should avoid curcumin. There is evidence that heart disease can result from the overactivity of a gene called p53 that identifies and eliminates weakened cells in the heart. |

1 cup brown rice V4 cup wheat berries 2V2-3 cups water V4 teaspoon salt
• Soak rice and wheat separately overnight. Cover wheat with 1 cup water and rice with 1V2 to 2 cups water.
• Cook wheat 30 minutes. Drain well.
• Add to rice with salt and cook 50-60 minutes.
Variation Replace wheat berries with rye berries, dry corn, aduki beans, black beans, or lentils. |

Researchers at the National Cancer Institute, for example, have found that the curcumin in turmeric can help prevent HIV, the virus that causes AIDS, from multiplying. Research has shown, in fact, that when people with AIDS were given curcumin, the illness progressed at a slower rate.
Curcumin has also been shown to protect the eyes from free radicals, which are one of the leading causes of cataracts. In fact, a laboratory study found that curcumin was able to reduce free radical damage to the eyes by 52 percent. |
Particularly active polyphenols include ellagic acid from strawberries, green tea polyphenols, and curcumin, the yellow coloring in the spice turmeric, says Dr. Stoner.

Thus in Ayurvedic prescriptions it is frequently boiled and flavored with a pinch of warming spice such as cardamom, ginger, turmeric, or nutmeg to improve its digestibility.
