Oxalic acid is found in almost all fruits and vegetables, and especially in spinach. This is not to say that spinach should be avoided, as there is doubt as to whether or not the presence of oxalic acid has any major effect upon nutrition in normal circumstances. Where an individual has not been obtaining the desired balance of nutrients, then, of course, anything can happen. The more common sources are cranberries, chard, rhubarb, gooseberries, spinach, and beet leaves. |

If you cannot buy all organic produce, buy the organic produce that substitutes for the most pesticide-contaminated crops, such as grapes, carrots, and apples, and buy the non-organic fruits and vegetables that are less likely to be laden with pesticides (bananas, pineapple, watermelon, oranges, and tangerines tend to be relatively pesticide-free). If funds are limited, buy all meats and dairy products as organic, because nonorganic meats and dairy have up to 20 times more pesticides than nonorganic vegetables.

If we eat properly with plenty of fruits and vegetables, shouldn't we get enough of these electrolytes? How are we losing them? The body has some of these electrolytes stored, but they are not just hanging around like our fat storage depots. We can lose them rapidly if we exercise in hot weather, if we get a high fever, or especially if we develop vomiting and diarrhea. All doctors have had patients who were recovering from a sickness and then suddenly, and inexplicably, die. |
