They include a blend of vegetables, fruits, and herbs that would be hard to cram into a single fresh drink—so you get the benefit of a wide variety of food extracts. The drawback, of course, is that the green drinks aren't made up of fresh foods, so you do lose some of the nutritive value of fresh juices. But they are helpful, easy, and convenient—and you can get green drinks in powder or capsule form.

Population studies show that the risk of developing age-related macular degeneration is significantly reduced in people whose diet is rich in fruits and vegetables containing beta carotene.
Lutein and zeaxanthin are two carotenoids that appear to be even more important. These carotenoids are found in dark green vegetables such as spinach, kale, and collard greens. They function in the macula to absorb light and protect our eyes against light's damaging effects. |
Studies have shown that the average American eats approximately two servings of fruits and vegetables daily. This is a far cry from the government-recommended five to seven servings or the seven to ten servings advocated by most nutritional experts. Even when we do eat these foods, we're usually getting them after they've been cooked, when the enzymes have been destroyed by frying, boiling, steaming, baking, or microwaving.

Arditti adopted macrobiotics, reducing her fat intake even more by adopting an all-plant diet of fruits, vegetables, beans and grains, with no meat, poultry, fish or dairy products. She also began looking for other unconventional cancer therapies.
A year later she found the Commonweal Cancer Help Program, a week-long retreat for cancer patients in Bolinas, California, north of San Francisco. Commonweal does not treat cancer. In fact, to attend, participants must be under the care of an oncologist. |
Vegetarianism does not cure cancer, but many studies show that a diet high in red meat is associated with increased cancer risk, a diet high in fruits and vegetables reduces risk, and people with cancer who adopt a vegetarian diet survive longer than those who continue to eat meat.

But people who eat the most fruits and vegetables enjoy some protection, apparently because certain nutrients preserve the macula. At the University of Illinois in Chicago, researchers analyzed the diets of 3,000 elderly people. Compared with those who consumed the least beta-carotene, those who ate the most had a 40 percent lower risk of macular degeneration.

Our love of sweetness is probably instinctive, and for long centuries people found ample satisfaction in fruits, berries, and some vegetables. Eastern Mediterranean peoples in biblical times used honey as an added sweetener, and prized it so highly that Canaan, the promised land of the Israelites, was lauded as "a land flowing with milk and honey." Even today, you can hear honey praised as the finest of tastes in countless popular songs that speak of "kisses like honey" or "lips like honey." Honey has lost none of its appeal. |

North American herbalists and naturopathic doctors mainly use the roots for their medicinal properties, but the leaves and fruits are also used. A related species, common burdock (Arctium minus), can also be effective.
Burdock root contains many different constituents including inulin, phytos-terols, polyacetylenes, arctic acid, volatile acids, tannins, vitamin A, iron, calcium, sodium, and other minerals. It is said to be "cooling" in terms of its effect on body temperature.

On the other hand, fruits containing considerable carbohydrate (e.g., mangos, apricots, prunes, raisins) should be avoided by hypoglycemic patients ... or taken with adequate fat and protein.
Laxatives
Psyllium hydrophilic mucilloid preparations are commonly used for managing constipation and the "irritable bowel syndrome." Since several popular brands contain either dextrose or aspartame, they should be avoided by diabetics, patients prone to hypoglycemia, and aspartame reactors. Some (such as Hydrocil Instant® by Rowell) contain neither dextrose or aspartame. |

The most powerful fruits are the berries, particularly wild blueberries. Berry-containing juices are a convenient and economical way to obtain their health benefits. Black, and especially, green teas are wonderfully beneficial as they are also extremely high in antioxidant power. Grapes, grape juice and red wine are also very worthwhile sources of antioxidants. One should also eat the seeds in grapes (see chapter 14). We cannot recommend any particular brands of berry extracts at this time, since they fluctuate greatly in strength and purity.

However, individuals who deliberately choose a diet that is high in the most powerful fruits and vegetables can raise this fourfold, to 6,000 per day. Attaining this many antioxidants in the diet is a goal that everyone should aspire to.
Grapes and Wine
Red grapes always score high on the antioxidant charts. This is most likely due to the presence of an intriguing substance called resveratrol. Resveratrol is an antioxidant found in many foods, but most abundandy in peanuts and red grapes.
Red wine from cold climates (such as France) is a particularly good source of resveratrol. |
Most of the antioxidant power of these fruits was located in the juice portion, while the pulp contributed few antioxidants (although it contains fiber and other useful things). Among the commercial fruit juices, grape juice had the highest antioxidant power, followed by grapefruit, tomato, orange, and apple juice.
Although not tested, a logical choice for both adults and children are those increasingly popular drinks made up of cranberry, grape, raspberry, and apple juices. |

Head and Neck
Increased intake of fruits and vegetables is associated with a reduced risk of head-and-neck cancers. (146) In addition, there was a decrease in second primary tumors when people took more beta-carotene. (24)
Uterine
Beta-carotene blood levels are lower in women with cervical cancer than in normal controls. (339) Serum levels of total carotenoids, as well as two specific carotenoids (cryptoxanthin and alpha-carotene) were lower in people with cancer. |

Lycopenes are reddish pigments from the carotenoid family. Most fruits and vegetables contain little to no lycopenes. Tomatoes are the richest source of lycopenes, with watermelon, and red grapefruit containing appreciable amounts of lycopenes.12 100 grams of raw tomatoes, or about 1 cup, contains about 3 milligrams of lycopenes. Lycopenes made headlines around the world, and cheers in many college dorms, in December of 1995 when a scientific study published in the Journal of the National Cancer Institute found that men who ate more PIZZA experienced less prostate cancer. |

That's why I prefer fresh whole foods—whole grains, whole fruits, whole veggies, whole beans, whole spices, and whole herbs—over processed foods.
Another advantage of eating fresh foods is that you avoid synthetic preservatives, genetically engineered foods, and animal-plant cross-species hybrids, all of which are unfamiliar to human genes. It may be months, years, even decades before we realize how these high-tech foods can harm us. I suspect that healthwise, their batting averages will be about the same as those of synthetic pharmaceuticals. |

Of the 15% of annual lung cancer patients who are not smokers, which totals over 22,000 deaths per year, fruits and vegetables can provide major protection against lung cancer.19
Beta-carotene and other carotenoids have been thoroughly reviewed regarding their role in cancer and found: "...carotenoids exert an important influence in modulating the actions of carcinogens."20 Beta-carotene has been shown to play a major role in the "telegraph" communication between cells that prevents or reverses abnormal growths. |

These same hospitalized sufferers fared better on a diet composed of the more desirable carbohydrates—such as raw fruits, fresh vegetables, dried beans. Cholesterol declined for them; perhaps you could expect similar good results. Don't exclude whole grain cereal products either. These are blood fat-reducing foods, too, although they may not be as dramatic in this respect as the foods just cited. Complex carbohydrates should be used for the wide variety of nutritional benefits they bestow.

Five a Day
The National Cancer Institute recommends that people eat five portions of fruits and vegetables per day. Here is official recognition of the power of antioxidants. There's no question that this five a day campaign is one of the best things NCI has ever done. However, there are several limitations. There is very little publicity for this campaign; five one-half cup portions per day may not be enough to get the maximum effect; and most importantly, it is impossible or impractical for most people to get all their nutrients through food alone. Supplementation is necessary. |

Be sure to carefully rinse the soap off soaked vegetables and fruits before storing or eating them.
The other option you have is to buy organically grown produce. Organically raised products are always preferable to those that are not. With organic produce not only will you avoid pesticides but also fungicides, herbicides, and chemical fertilizers. You still have to thoroughly wash your fruit and veggies because even your backyard organic garden can be contaminated by pets or a passing raccoon. |

It occurs naturally in apples, cheese, cocoa, coffee, grapes, skimmed milk, oranges, peaches, pineapples, strawberries, and a variety of other fruits and plants. Vinegar is about 4 to 6 percent acetic acid, and essence of vinegar is about 14 percent. In its glacial form (without much water) it is highly corrosive, and its vapors are capable of producing lung obstruction. Less than 5 percent acetic acid in solution is mildly irritating to the skin. GRAS for packaging only, not for direct ingredient in product. It caused cancer in rats and mice when given orally or by injection. |
ALDOL • Made from acetaldehyde, which occurs naturally in apples, broccoli, cheese, coffee, grapefruit, and other vegetables and fruits. It is a colorless, thick liquid used in the manufacture of rubber and in perfumes. It has also been used as a sedative and hypnotic in medicine. May cause contact dermatitis. ALEURITIC ACID • A yellowish solid obtained from shellac (see). It is used in perfumes.
ALEURITES MOLUCCANA • Kukui. Fatty acids derived from Aleurites moluccana are used in skin conditioners. See Kukui Nut Oil.
ALFALFA EXTRACT • Lucerne. Extract of Medicago sativa. |
A European tree or shrub that has hard wood and bears small white flowers and small purplish or blue-black astringent fruits. Used in astringents.
BLACK WALNUT EXTRACT • Extract of the leaves or bark of the black walnut tree, Juglans nigra, found in eastern North America. It produces nuts with a thick oil and is used as a black coloring.
BLACKSTRAP POWDER • Obtained from sugarcane in the processes of sugar manufacture. It is a natural flavoring ingredient. No known toxicity. BLADDER WRACK EXTRACT • Fucus. Sea Wrack. A common black rock-weed used in cosmetics such as tanning lotions. |
