Population studies show that the risk of developing age-related macular degeneration is significantly reduced in people whose diet is rich in fruits and vegetables containing beta carotene. Lutein and zeaxanthin are two carotenoids that appear to be even more important. These carotenoids are found in dark green vegetables such as spinach, kale, and collard greens. They function in the macula to absorb light and protect our eyes against light's damaging effects.
Studies have shown that the average American eats approximately two servings of fruits and vegetables daily. This is a far cry from the government-recommended five to seven servings or the seven to ten servings advocated by most nutritional experts. Even when we do eat these foods, we're usually getting them after they've been cooked, when the enzymes have been destroyed by frying, boiling, steaming, baking, or microwaving. This is most likely due to the presence of an intriguing substance called resveratrol. Resveratrol is an antioxidant found in many foods, but most abundandy in peanuts and red grapes. Red wine from cold climates (such as France) is a particularly good source of resveratrol.
Most of the antioxidant power of these fruits was located in the juice portion, while the pulp contributed few antioxidants (although it contains fiber and other useful things). Among the commercial fruit juices, grape juice had the highest antioxidant power, followed by grapefruit, tomato, orange, and apple juice. Although not tested, a logical choice for both adults and children are those increasingly popular drinks made up of cranberry, grape, raspberry, and apple juices.
