Hawthorns furnish food and cover for wildlife; species with fruits that persist over winter are especially valuable. Many species are useful for environmental plantings. People who can get beyond its sulfurous perfume rank the durian supreme of all fruits. The durian currently has limited availability in the United States.
Use Overripe durians split along seams that are faintly visible among the spines. To open a durian, insert a stout knife into such a line. Durians have about five segments, each containing several seeds surrounded by a rich, juicy custardlike aril, which may be spooned out and eaten as is or used in baking or in a milk-based beverage, ice cream, or custard. Frozen and baked preparations diminish the aroma. |
FEIJOA
Pineapple Guava (Feijoa sellowiana)
Native to southern Brazil and northern Argentina, the feijoa (fay-JOH-ah) is a subtropical evergreen tree that bears small, bumpy fruits that look like fuzzless kiwis. The fruit is lime green in color and has a tart, tutti-frutti flavor. A feijoa's strong perfume suggests pineapple, strawberry, spruce, quince, and mint. It has a granular but creamy whitish flesh that surrounds a jellylike central cavity filled with tiny edible seeds. The U.S. commercial supply is grown in California and New Zealand. |
Caution: Food writer Elizabeth Schneider, in Uncommon fruits and Vegetables, warns against the bracken fern (Pteridium aquili-num), which may be extremely carcinogenic. It is consumed both domestically and in Japan. Schneider cites Dr. John Mickel, fern curator at the Bronx Botanic Garden in New York, as "adamant that the fern, the fiddle-head commonly marketed, is the only one that is definitely noncarcinogenic."

In green vegetables, fruits and egg yolk, lutein and zeaxanthin exist in non-esterified forms. They also occur in plants in the form of mono-or diesters of fatty acids. For example, lutein and zeaxanthin dipalmitates, dimyristates and monomyristates are found in the petals of the marigold flower (Tagetes erecta). Many of the marketed lutein nutritional supplements contain lutein esters, with much smaller amounts of zeaxanthin esters, which are derived from the dried petals of marigold flowers.

Carotenoids are the principal pigments responsible for the red, orange, yellow and green colors of vegetables and fruits. Beta-carotene is responsible for the color of carrots.
Beta-carotene along with alpha-carotene, lycopene, lutein, zeaxanthin and beta-cryptoxanthin are the principal dietary carotenoids. Three of these carotenoids, alpha-carotene, beta-carotene and beta-cryptoxanthin, can serve as dietary precursors of retinol {a\l-trans retinol, vitamin A). |
The peel and membranous parts of these fruits have the highest hesperidin concentrations. Therefore, orange juice containing pulp is richer in the flavonoid than that without pulp. Sweet oranges (Citrus sinensis) and tangelos are the richest dietary sources of hesperidin. Hesperidin is classified as a citrus bioflavonoid.
Hesperidin, in combination with a flavone glycoside called diosmin, is used in Europe for the treatment of venous insufficiency and hemorrhoids. |

Although many fruits and vegetables have some magnesium in them, especially good sources of magnesium are whole grains, wheat bran, leafy green vegetables, nuts (almonds are a very rich source of magnesium and calcium), beans, bananas and apricots.

Most of the good and all of the bad prostaglandins are made from GLA oils, or gamma linoleic acid, a type of essential fatty acid found in fruits, vegetables and grains. You need GLA to make the majority of the good prostaglandins, but then you need to make sure it goes down the good prostaglandin pathway. What drives GLA down the wrong pathway to the bad prostaglandins? The biggest culprits are dietary: hydrogenated oils such as margarines, and a diet high in refined carbohydrates and sugar will drive GLA oils down the bad pathways. |
There are small amounts of GLA oils in oatmeal and trace amounts in many fruits and vegetables. You only need minuscule amounts of these oils to drive your prostaglandin pathways. One particular form of soluble fiber known as pectin is found in the outer skin and rind of fruits and vegetables. The skin of an apple contains 15 percent pectin, while an onion skin contains 12 percent. Pectin, like other forms of soluble fiber, lowers cholesterol levels by preventing the reabsorption of cholesterol in the gut.

When I was in the former Soviet Union in 1979, various plant scientists with whom I discussed juniper used the term aril instead of berry for these fruits. They informed me that the immature berries are generally greenish; ripe berries are blue-black to red-brown and are usually covered with a conspicuous white, waxy bloom. I've discovered in my own investigative work that the fruit coat may be thin and resinous as in eastern red cedar, Rocky Mountain, and one-seed juniper, or nearly leathery or mealy as in the Utah juniper. |
Brief Description
The guar plant is a small nitrogen-fixing annual that bears fruits known as pods containing 5-9 seeds per pod and can grow to nearly 6 feet in height. The part used is the endosperm of the seed. The endosperm constitutes 35-42% of the seed; it's separated from the other components of the seed (seed coat or hull and embryo or germ) during processing. Rose Conserve for Illness Recuperation
Often those recovering from serious illness or surgery have a difficult time digesting or holding down the food they eat. One of the simplest foods I know of for such special cases is a conserve made from brier rose petals. It not only tastes good, but also smells good. It has a tonic effect on the system and restores some energy.
To make this conserve, scald a quart of brier rose petals in 1-1/4 cups boiling water for 2-1/2 minutes. |

Experts recommend a potassium-to-sodium ratio of 5:1. Many fruits and vegetables have a potassium-to-sodium ratio of at least 50:1 and many times as high as 100:1. For example, bananas have a potassium to sodium ratio of 440:1, while oranges have a ratio of 260:1.
DOSAGE
It is best to increase potassium intake through foods, thus consuming other helpful vitamins and minerals as well. Buying Cherries are one of the few remaining fruits that are truly seasonal. They are too fragile to import; only domestic cherries are available and then only from mid-June through July. (If you find them later than that, they've been held in storage too long to be worth much.)
Look for full-colored, soft cherries with a glossy, plump surface and fresh stems. Avoid overmature, dull-looking cherries with shriveled, dried, brown stems. Examine closely, since cherries decay easily and their decayed areas are often inconspicuous. |
