Historically, humans have eaten animal products, augmented with vegetables, fruits and nuts. It is my belief that eating organic animal products (those that are free of antibiotics and hormones) is a safe and healthy way to provide the body with the necessary elements (protein and fat) to promote health and to have a properly functioning immune and hormonal system. My experience has shown that those who limit protein intake are more likely to develop degenerative disorders.

Wearing sunglasses and not smoking may reduce the risk of cataracts, but an even better strategy is to eat more fruits and vegetables, says Allen Taylor, Ph.D., director of the Laboratory for Nutrition and Vision Research at the Jean Mayer USDA Human Nutrition Research Center on Aging at Tufts University in Boston. These foods contain a variety of protective compounds that can stop damage to the eyes before cataracts have a chance to form. |

Our hope is that with more research we'll be able to pinpoint which compounds are most beneficial and which fruits and vegetables people should emphasize in their diets," says Dr. Willett.

As his name suggests, Popeye has his share of vision problems. But according to research on his favorite leafy elixir, he won't likely have problems with macular degeneration—the leading cause of irreversible vision loss in older adults. |

The word fungus often brings to mind unsalutary growths such as athlete's foot, the blue and green molds that grow on citrus fruits, the fuzzy white stuff on stale bread, or the mildew that thrives in dirty showers. Farmers and people who live in agricultural areas have also heard about the fungal parasites that can devastate food crops such as corn, rice, wheat, and rye. So what does the familiar umbrella-shaped mushroom have to do with these fearsome fungi, and how could fungi possibly be medicinal?
Actually, mushrooms are just one of the many kinds of fungi. |
Dioscorides reflects the low esteem in which fungi seem to be often held in the ancient world— he says of them in general that they are difficult to digest, often poisonous, and he mentions that "they grow amongst rusty nails or rotten rags, or ye holes of serpents, or amongst trees properly bearing harmful fruits." The only fungus that seemed to have any kind of reputation as a healing medicine was the "Agaric" (Agaricon). |

The major dietary sources of Vitamin C are fruits and vegetables. Recommended dose: 3000-5000mg per day.
8. Vitamin D Vitamin D is necessary for maintaining the structural integrity of bones and teeth. It also is important for maintaining a healthy hormonal system. I have found very low levels of Vitamin D in patients with arthritis. Vitamin D is found in animal sources, and it can also be made in our bodies by exposure to sunlight. Recommended dose: 1000-2000 Units per day. Vitamin D levels should be checked periodically. 9. |
Unrefined carbohydrates are found in whole foods, such as fruits, vegetables and whole grains. These whole foods contain vitamins, minerals, enzymes and fiber that aid the body in their digestion. Therefore, the body does not become depleted from the ingestion of unrefined carbohydrates (in contrast to the ingestion of refined carbohydrates).
One must choose carbohydrates that do not excessively raise blood sugar levels. Dr. Barry Sears, the author of The Zone books states, "All carbohydrates are not created equal."7 Carbohydrates can be rated on a "glycemic index" scale. |

In the 1970s German researchers at the University of Munich validated milk thistle's long reputation as a hepatic folk medicine by identifying its liver-protecting pharmacological agents in the seeds or fruits of the flower and even detailing how they work against the most lethal liver toxins known. In a landmark series of studies, they showed that feeding rats a slow-acting liver-destroying chemical killed 100 percent of them in 130 days. But when animals simultaneously got milk thistle, 70 percent of them survived! |

Judging from what some other health-minded pet owners and veterinarians feed their dogs, I surmised these things probably had to be raw vegetables such as carrots, celery, parsnips, and turnips and maybe a few fruits such as apples.
Biscuits to Prevent Gingivitis
If tartar is permitted to build up for very long in an animal's teeth, the gum edges begin to get inflamed. This is easily detected as a puffiness and red line along the gingiva next to the tooth. Gingivitis is the first stage of real periodontal disease. If left untreated, the gums will continue to get more inflamed and infected. |

Examples of foods that have been stripped of their nutrients include refined flour, refined sugar and partially hydrogenated oils.
3. fruits and vegetables have been contaminated by the widespread use of pesticides. The antibiotics and hormones given to animals are another source of contamination. These contaminated foods cause oxidative damage in the body.
When we eat food rich in nutrients, the body will use these nutrients to aid in digestion. |

The Mediterranean diet emphasizes tomatoes, garlic, onions, fruits, whole grains, seafood, and olive oil. It contains very small amounts of dairy foods, eggs, and sweets. People living in certain regions on the Mediterranean Sea enjoy some of the lowest rates of cancer and cardiovascular disease in the world and great longevity. Life expectancy in Greece, one of the highest in the world according to the World Health Organization (WHO), ranks second only to Japan. |

Large quantities of fruits and vegetables, even in the form of juice, are neither healthy nor well tolerated. Fruit juice is simply sugary water with a few vitamins thrown in. And when consumed, it's certainly better to eat the actual fruit itself, so the stomach at least has the potential to feel full before too much sugar is consumed.
The American habit of consuming large quantities of juice every day is ill-advised. It's been only a few thousand years since humans began to cultivate fruit trees, and squeezing fruit or vegetables to make juice is even more recent. |
Don't misunderstand: We're certainly not suggesting you eliminate fruits and vegetables from your diet, just that you don't consume more than 12 grams (6 BUs) of carbohydrates daily in all forms. If, for you, this means eating less fruit, then we urge you to take this step. Your health certainly will benefit.
VITAMINS
Vitamins are small molecules that the body cannot make, so they must be obtained from the food supply. They are called small molecules because most molecules in the body are quite large, such as proteins, lipids, and nucleic acids, that is DNA (deoxyribonucleic acid). |
All too often, we are told that eating more fruits and vegetables will reduce colon cancer risk. Although this view is propagated by many, there is very little evidence to support it.
In the aforementioned Nurses Health Study, 88,757 women between the ages of thirty-four and fifty-nine were evaluated to determine if the consumption of fiber had any association with colon cancer.15 During the sixteen-year period, 787 cases of colorectal cancer were documented. The conclusion from this study was that there is no evidence to link higher intake of fiber with a decreased risk of colon cancer. |
The simple message of this chapter is that, contrary to popular opinion, fruits and vegetables are not required for vitamins and minerals. In fact, essential vitamins and minerals reside in animal foods; moreover, many invaluable nutrients can only be found in appreciable quantities in animal foods. So the next time you're eating a piece of fruit or a serving of vegetables, ask yourself, "Have I had enough CoQIO, L-carnitine, vitamin D, selenium, calcium, and vitamin B12 today? |

But phytonutrients, found exclusively in vegetables, fruits, and herbs, pack the power to defeat the degenerative diseases that stalk most Americans—cancer, heart disease, diabetes, and osteoporosis.
I think of phytonutrients as industrial-strength vitamins. Here's why:
• Disease Prevention: Recent research indicates that vitamin E and the phytonutrient lycopene (responsible for the red color of tomatoes) both reduce the risk of heart disease and some types of cancer. |

Those most likely to have low supplies are children from poor families, who may not get enough vitamin A-fortified milk or beta-carotene-rich fruits and vegetables. In some areas of Africa and Asia, both children and adults die as a result of lack of vitamin A, usually from infections.
Others who may suffer from vitamin A deficiency are alcoholics, people who can't absorb fat properly, and people with liver disease (vitamin A is stored in the liver). |

IMMUNE BOOSTERS
Phytonutrients in tomatoes, cabbage, watermelon, onions, soybeans, garlic, and citrus fruits can boost the immune system to help kill cancer cells that remain after surgery, chemotherapy, or radiotherapy. They also help reduce the toxic side effects of these rigorous treatments.
Phytonutrients usually provide a degree of immune system stimulation no ordinary vitamin-mineral supplement can achieve. In this sense, phytonutrients play a leading role in disease prevention. |

Hidden inside vegetables, fruits, flowers, herbs, and grains are certain pigments that seem to do a lot more than add color to the scene. Once thought to be lacking in nutritional value, the compounds called bioflavonoids are now in the spotlight and are being given new consideration for a lot of their colorful activities. Among their other powers, research has shown, these hidden stars may have anti-inflammatory, anti-allergic, antiviral, and anti-cancer properties. |

Replaces whole grains and cereals with carotenoid- and cruciferous-rich vegetables as the pyramid foundation
• Replaces red meat, pork, and fowl with soy-based meat analogues and seafood rich in omega-3 fats
• Limits added fats primarily to monounsatured oils and omega-3 fats
• Limits dairy foods (optional) to small amounts of skim milk and fermented skim-milk products
The foundation of the Phytonutrient Food Pyramid is built upon vegetables and fruits rich in cancer-fighting carotenoids and flavonoids. |
Sugar intake is derived mostly from natural sugars contained in fruits and fruit purees. A small amount of added sugar is occasionally permitted in selected recipes.

Except for chromium, animal foods supply more of each mineral. fruits supply only manganese. Five of the minerals can be found in grains, but it's been shown that the amount of the various minerals in grains, including selenium, is heavily dependent on the mineral supply of the soil in which they were grown.
Many published charts on vitamin and mineral supplies in foods are designed in a way that does not show animal foods to have large amounts of these vital nutrients. This is one way that people are led to believe that animal foods do not offer much in the way of these nutrients. |

Seeds and some fruits frequently have dark brown coats or skins, which are 100 percent protective of the fragile oils contained in their tissues. After years of development, this company settled on black opaque bottles that were inert and which prevented any penetration by light; soon afterward other companies started to follow this example, especially for the more light-sensitive oils. |
The pyramid's daily recommendations, starting at the bottom of the pyramid, are to consume 6 to 11 servings of bread, cereal, rice, and pasta, 3 to 5 servings of vegetables, 2 to 4 servings of fruits, 2 to 3 servings of milk, yogurt and cheese, 2 to 3 servings of meat, poultry, fish, dry beans, eggs and nuts, and to use fats, oils and sweets sparingly.
Know Your Fats suggests that individuals who are carbohydrate sensitive need to exert caution regarding the use of the pyramid as a guide for selecting from mostly refined food products. |

Achieving a long-term or permanent remission is far more involved than simply self-medicating at a salad bar, but the basic fact is that specific phytonutrients found in vegetables, fruits, seeds, herbs, and plants provide the most potent force in nature to send cancer and other life-threatening disease into a state of suspended animation.
Phytonutrients are also the most powerful means we have to prevent cancer. Even if you eat a less-than-optimal diet, phytonutrients can still help to forestall the biochemical events that turn healthy cells into cancer cells. |
