Foods that are high in carbohydrates, like flours, grains, tubers, and fruits, should be very limited. Good diet and exercise alone can often work wonders in bringing down blood sugar levels. Carotenoids Close to five hundred types of carotenoids exist in the plant world, thirty-four of which occur in fruits and vegetables found in the human diet. The best known of these is beta-carotene, which recently received a bad name due to a poorly conducted experiment. While young people do well at ten servings a day of fruits and vegetables, the elderly need twelve servings to gain health benefits. Whether this is inborn or develops as a result of the disease itself, we do not know for sure, but the evidence seems to indicate that it plays a significant role in development of the disease.
A recent review found that of all the factors associated with reducing osteoporosis, the most effective was maintaining a diet high in fruits and vegetables,426 which contain large amounts of magnesium and potassium, both of which are strong buffers. When such buffers are present, calcium in the blood actually moves back into bone. In addition, flavonoids in plants also prevent bone loss.427 Edible plants also contain numerous other vitamins and minerals— including boron, zinc, magnesium, vitamin K, and some omega-3 fatty acids—that play a role in strengthening bones.
You should eat at least seven to ten servings of high-nutrient dense fruits and vegetables every day. As we have seen, the potassium and magnesium in plants protects the bones, and many high-density vegetables also contain a fair amount of calcium, which balances their high magnesium content. Minimize meat intake. If you are not a vegetarian, eat no more than six ounces of meat twice a day. To gauge the amount of meat more conveniently, it should fit in the palm of your hand—not a gorilla's hand, your hand. Avoid pork and red meat altogether. Avoid soft drinks.

Another problem with the public's (and medical establishment's) perception of Atkins' program is that it was based solely on the first (1972) edition of his book. In that edition, where Atkins first put forth the radical proposition that cutting carbohydrates was the key to controlling insulin, he didn't pay as much attention to what you were allowed to eat, concentrating instead on the foods you were not allowed.
This is how the experiment went: For the first three weeks, Ste-fansson and Anderson were fed the standard diet of the time: fruits, cereals, bacon and eggs, and vegetables. (Notice that there were no fast foods, no snacks, and no vending machine fare available then, so by today's standards, the "ordinary" diet was already light-years better than what we eat now.) During those first three weeks, the two guys were given preliminary checkups and were basically free to come and go as they pleased. After the first three weeks, they went on the all-meat diet and were more or less under house arrest.
