Modified citrus pectin (MCP), also known as fractionated citrus pectin, is a complex sugar (polysaccharide) obtained from the peel and pulp of citrus fruits. A great way to start the party is to set out bowls of fruit salad or trays arranged with a variety of colorful fruits cut into squares. Include some toothpicks for the fun of it. Kids also love melon balls, especially if you do all three colors (pink, green, and orange).

The flavonoids in deep-colored pigments in fruits, and the carotenes in vegetables, are examples of isoprenoids. Inside cells they perform a rather interesting function, they can deactivate oncogenes (common mutant genes in human cancers), thus reducing the risk for cancer. There is a reason cultures with diets containing fresh fruit, vegetables, and whole grains have lower cancer rates. If you don't eat these foods then you will run low on isoprenoids. A recent review found that of all the factors associated with reducing osteoporosis, the most effective was maintaining a diet high in fruits and vegetables,426 which contain large amounts of magnesium and potassium, both of which are strong buffers. When such buffers are present, calcium in the blood actually moves back into bone. You should eat at least seven to ten servings of high-nutrient dense fruits and vegetables every day. As we have seen, the potassium and magnesium in plants protects the bones, and many high-density vegetables also contain a fair amount of calcium, which balances their high magnesium content.

Vitamin C is naturally found in peppers, citrus fruits, tomatoes, melons, broccoli, and green leafy vegetables such as spinach, and turnip and mustard greens. However, don't rely on eating an orange a day to give you enough of this nutrient as one study showed that "fresh" oranges bought from some vendors contained no vitamin C at all due to to the excessive amount of time they had been stored. The fluoride not only clings tenaciously to the skin of the fruits and vegetables, but also can soak into the pulp of the plant as well.
