But even if you went to the grocery store for fruits and vegetables and ate them three times a day, you still wouldn't be getting adequate nutrition. To figure this out for yourself, just do the math. Add up the U.S. RDA numbers on the labels of all the foods you consume, and you'll find out that if you're going to meet the minimum requirements set by the U.S. government for preventing chronic disease, you're going to have to eat, on average, 10,000 calories a day of grocery store foods. For breakfast, he jumped into oatmeal, figuratively speaking, and kept bananas and other fruits on hand both at home and at work.
While he found the diet surprisingly easy, he ran into a stumbling block at the beginning. He served himself modest portions and resisted going back for seconds—that felt like cheating. As a result, he often felt hungry. The fix: He simply ate more. On another occasion, he took my advice to eat beans a bit too far and had an episode of gastric distress. You can quite easily see this yourself by growing plants in various soils and noting the difference in the plant height, viability, production of fruits or vegetables, and other characteristics.
I conducted one such experiment myself and planted sunflower seeds in various soils. The seed on the left was planted in desert soil that has very low nutrition (it's mostly sand). The seed on the right, which was planted at the exact same time and day, was planted in topsoil made from forest compost products, such as leaves, pine needles and so on. |
And it actually took hundreds of years before the right scientist came along and discovered that this was caused by a simple nutritional deficiency that could be cured by eating fruits high in vitamin C such as limes. Hence the name 'limeys' for sailors.
That's just one example of a disease caused by nutritional deficiencies. There are many other diseases such as rickets and beriberi caused by nutritional deficiencies. Asian people who historically ate polished, processed rice (white rice) frequently got beriberi, a disease caused by a deficiency in vitamin Bl (thiamin). |
So even if they were eating perfect foods, unprocessed foods, fresh vegetables, fruits and whole grains, they would only be getting one-fifth to one-third of the nutrition they actually need to achieve optimum human health. This is based on USRDA numbers, by the way, with a multiplier for various vitamins and minerals. In other words, the USRDA numbers tell you how many grams, milligrams or micrograms of various nutrients you need just to prevent obvious deficiencies that cause disease. But to achieve optimum human health, you need far higher quantities of many vitamins and minerals. |

Whole grains, fruits, vegetables, and other plant foods are good sources of dietary fiber. Most health-care practitioners accept that fibet promotes normal bowel function, prevents constipation, and helps prevent diverticular disease of the colon. In addition, evidence suggests that eating enough fiber may reduce the risk of heart disease, diabetes, hemorrhoids, and some types of cancer.

The studies show that high consumption of fruits and vegetables wards off a variety of cancers. (They also show that consuming red meat multiplies the risk of colon cancer.) Another study in the same issue shows that consuming olive oil reduces the risk of breast cancer.
So here we're talking about a wide variety of cancers: prostate cancer, breast cancer, colon cancer, even leukemia and multiple myeloma. And across the board, we're seeing that consuming a plant-based diet is what prevents cancer and enhances health at many different levels, including cardiovascular health. |

Soluble fiber is also found in many vegetables and fruits.
Soy products have a special cholesterol-lowering effect. Aside from the fact that they have no cholesterol or animal fat, there is something about soy protein that brings down cholesterol a bit further. If your burger is made of soybeans instead of beef, you will not only skip beef's cholesterol and fat, you will also get an extra cholesterol-lowering benefit.10

You might have big chunks of vegetables or fruits in the blender, and so you want to go fairly slow to get those chunks broken up. After you have those chunks broken up, you want to increase the speed to a finer blend. The K-Tec blender doesn't really give you much control over the speed. You sort of have to wait through a full preprogrammed cycle and hope it eventually reaches the speed you want.
On the upside, the K-Tec blender is more powerful than the Vita-Mix. It sports 3 horsepower versus Vita-Mix's 2.2, and that difference in power definitely shows itself in the kitchen. |

As a result, if you observed a group of people in a study and you made sure they ate raw fruits and vegetables and avoided all of the refined, manufactured food products, you would see phenomenal results. If you had people eating raw blueberries, nuts, green leafy vegetables, salads, and consuming whole drinks made from vegetable concentrates, then the results would be vastly different from what you're seeing in these published studies. You'd see diseases like cancer literally vanishing in the group. |

The whole plant (rather than the fruits typically used in Chinese medicine) was combined only with a small amount of poultry trachea (0.5%), decocted and made into tablets. With two grams of herb extract in each tablet, they were taken in the amount of 15 to 16 tablets daily (thus about 30 grams of crude herb equivalent) for 45 to 60 days. This method was claimed to cure 41 of 90 patients (45%), a rate comparable to that obtained with the complex formulas; another 44 patients had some degree of improvement. |

That may take some doing, but it can be accomplished with 5 to 10 servings of vegetables and fruits a day, along with whole grains rather than refined bread, pasta, crackers, and the like. For some people, though, even that may not be enough to conquer constipation completely.
If constipation arises suddenly or if it starts to interfere with everyday activities, it makes sense to check in with your doctor. Grains, fruits, and most vegetables get a not-guilty verdict. Beans and undercooked cruciferous vegetables (broccoli, cabbage, cauliflower, and brussels sprouts, for example) are the main culprits. Chances are, all you need to do is have smaller servings. If you have been replacing a huge steak with a huge plate of beans, remember that a small amount of beans goes a long way. Try downsizing your portions.

Meals will always cause a temporary rise in blood glucose; what you are looking for is an overall trend downward as your insulin sensitivity gradually improves.
See your doctor. A very common reason for rising blood glucose levels is infection. A cold, a urinary tract infection, a foot sore, an ear infection—you name it.
