Thus, cranberry juice is best viewed as a preventive, especially for those susceptible to recurring urinary infections. But once bacteria have gained a foothold, pharmaceutical drugs may be needed to control the infection, which, if allowed to progress, could cause severe kidney destruction. People with symptoms of urinary tract infections should seek a physician's advice. Cranberries are nature's marvelous way of keeping us healthy over the long term, but they do not match antibiotics in a crisis.

Then a student suggested he try cranberry juice, which a local hospital was using successfully to treat paraplegics, who are uncommonly susceptible to urinary tract infections. Dr. Sobota knew it wasn't crazy. References in the medical literature on cranberries dated back to 1860. In 1923 two American physicians fed cranberries to humans and noticed increased hippuric acid, a reputed antibacterial substance, in their urine. Later researchers pinpointed quinic acid in cranberries as the agent generating the hippuric acid.
Virtually none of the polioviruses survived (less than one percent) after being face-to-face for twenty-four hours in a test tube with extract of blueberry, crabapple, cranberry, grape, plum, pomegranate, raspberry, or strawberry. Even when the extract was diluted ten to one, practically all the viruses were crippled. Peaches were least effective: still, when diluted, peaches neutralized about eighty percent of the poliovirus. The researchers concluded that "the antiviral components of various fruits and plants may act both on viruses and host cells to prevent infections.

James Tillotson, head of research at Ocean Spray, where cranberry juice research is of high priority, believes that one day the government may insist on labeling not only nutrients in foods but also a food's total health effect based on solid studies of its pharmacological powers. All of us are now using trial and error in the food pharmacy with virtually no knowledge of the outcome. In the future we will no doubt learn to assess biochemical responses so precisely that applied food pharmacology will be as routine as drug pharmacology.
